– 2 large egg – 2 teaspoons pure vanilla extract – 1 cup boiling water (240 ml) – 1 teaspoon instant espresso powder optional but recommended

Making chocolate cake: Preheat oven to 350°F (180°C). Prepare three 8-inch round cake pans with nonstick cooking spray and parchment paper.

Strain flour, cocoa powder, baking soda, and salt in a large bowl. Stir in brown and granulated sugar. Mix oil, buttermilk, eggs, and vanilla extract until thick like brownie batter.

Dissolve instant espresso powder in boiling water. Mix the batter in the basin until just smooth and thin. Divide batter among three cake pans.

Bake cakes for 25–30 minutes until a toothpick inserted into the center comes out clean and tops spring back. Cool pans on a wire rack for 20–30 minutes after baking.

Remove the cakes from the pans (peel the parchment paper if needed) and cool them on the wire rack after running a knife around the outside of each cake layer.
